Wonderlights Celebration

5.00 pm or 6.45 pm, New York Bakery $69.00 per adult, $20.00 per child (0-15)

A delicious 2-course dinner. Main course features Char-grilled Turkey Breast with Jus served on Creamy Sweet Potato Mash with Root Vegetables and Prosciutto Crisps alternating with Slow-cooked Orange and Maple-glazed Lamb Shank served on Parsnip Purée atop Golden Pastry. A Selection of Traditional Roast Vegetables and a freshly-baked bread roll with butter are served to the table.

For vegetarians, we have a Medley of Field Mushrooms, Pumpkin and Wild Rice accompanied by Broccolini and Cauliflower Florets, Blistered Peppers and Winter Vegetable Crisps.

Dessert features a Spiced Vanilla Bean Panna Cotta with Berry Gel and Fairy Floss. Finish with Freshly-brewed Coffee and a Selection of Teas (served buffet-style).

Children will enjoy Lightly-crumbed Chicken Tenders with Roast Vegetables, Thick-cut Potato Chips and Tomato Sauce. Their dessert is a Raspberry Jelly Pot with a Sugared Gingerbread Cookie and Fairy Floss.

Note that on some evenings, this meal will be served upstairs in the Theatre Retiring Room, above the United States Hotel Bar.

Your Buffet Carvery Station will feature Lentil and Bacon Soup, Slow-cooked Roast Beef Rubbed with Herbs and Spices and served with Gravy, and Christmas Turkey with Cranberry Jus.

A generous selection of hot side dishes will include Roast Potatoes, Roast Pumpkin, Roast Root Vegetables, a Parsnip Purée with Shrimp Sauce & Gratin Coconut, Béchamel and Cheese-baked Broccoli, Gnocchi with Tomato and Basil Sauce, and Christmas Rice.

For those who fancy something cold, there will be Cherry Tomato and Feta Cheese Salad with Basil Pesto Dressing, Crisp Mixed Leaves with a Balsamic Vinegar Reduction, a Rocket, Mango and Mixed Sesame Seed Salad, and Grilled Antipasto Vegetables with Quinoa.

Visit the Sweet Station for Individual Plum Pudding with Brandy Custard, Sticky Date Pudding with Butterscotch Sauce, Pavlova with Vanilla Cream and Fresh Berries, Individual Mousse Pots (Chocolate, Passionfruit or Raspberry), Black Forest Gâteau, and Fruit Salad with Spiced Citrus Juice.
